Is there an option to shuffle a playlist?
Also is there a quick way to add "songs" to a playlist.
I have a lot of comedy audio that I would like to add to a playlist but this will take a long time to add by each track.
I have created a Watch Folder for this - is there an option to add the Watch Folder to the playlist?

Currently to shuffle a playlist, you need to switch shuffle mode on first "Alexa, ask My Media to turn shuffle mode on". Shortly, we'll add new commands like 'Alexa, ask My Media to shuffle my xxxxxx playlist', etc.

You can use the Songs tab within My Media to search by filename including folder, so quickest thing to do is probably to enter the watch folder path name into the Search box on the Songs tab, select all the songs returned and add those to your playlist.

Adding playlist based on Watch Folder is on the to do list
