This might be more of an iTunes issue, but I would like the only options on the remote app on my iPhone to be my three AirPlay devices, not "My Computer". My server doesn't (AFAIK) have an audio card installed, why does "My Computer" even show up?

You're right - this is an iTunes question, and as far as I know there's unfortunately no way to hide it. Even though your computer may not have a sound card, iTunes still thinks of it as a valid device so will offer it as a target for playing music. If you play music to it, you're likely to receive an error because there's no sound card.
